Ok, first of all, I have a mental “thing” against buying pre-cooked meat- especially poultry products- with that whole “pink slime” scandal going on! Call me weird but whatever!
Because pregnancy doesn’t care about our moral issues with food, it’s only right that I would have a weeks long craving for breakfast sausage that just wouldn’t go away! First it was meatloaf (which I normally hate), but somehow that faded without me having to sacrifice my digestion… the sausage thing, not so much.
So any who, instead of stooping to the level of purchasing mechanically separated turkey “product” from my local grocer, I did what I always do- I Google’d the recipe. Yes y’all, that’s my secret- I Google everything (but who doesn’t?!)
I stumbled upon a recipe from the Good Eats guy – I always trust his stuff- and ran with it. He used “pork butt” (?!?) And y’all KNOW I wasn’t touching the pig so I dibble dabbled with the recipe ingredients and changed it to my liking. The results were AMAZING GRACE! I made little mini breakfast biscuits for the boys and I this morning. DELISH!
My four year old is a temporary vegetarian at the moment and he >devoured< these so you know it’s a winner!
But yeah…. here’s the recipe already!
This worked for about a half pound of ground turkey. Feel free to double- or triple- it up.
Turkey Breakfast Sausage
- 1/2 lb ground turkey
- 1 Tbsp olive oil
- 1/2 tsp sea salt
- 1/2 tsp fresh ground black pepper
- 1/2 tsp dried sage
- 1/2-3/4 tsp dried rosemary
- 1/2 tsp italian seasoning
- 1 skimpy Tbsp brown sugar
- 1/4 tsp nutmeg
- 1-2 pinches of chili powder (the spicy kind)
Mix it all together in a small bowl. Break into meatball sized balls- whatever size you prefer but I did about 1″ balls. Roll and smash into small disks. Cook on medium heat for about 4-5 minutes per side (we like our meat well done so…) or until brown and not mushy in the middle. Enjoy with from-scratch biscuits, jam, eggs, or some amazing and easy homemade syrup!
